Peanut Butter Baked Oatmeal is the perfect make-ahead breakfast that can be prepared on Sunday and enjoyed throughout the week, or even frozen for later.
Taking less than 10 minutes to prep and 45-55 minutes in the oven, it’s so easy to make and so delicious.
Peanut Butter Baked Oatmeal is packed with thick peanut butter, making it hearty, warm and comforting. It’s made with rolled oats, chia seeds for extra fiber, and filled with chocolate chips (and more on top!).
If you know me, you know I love baked oatmeal, and if you’ve never made it before, you’re in for a treat. I highly recommend adding this to your breakfast to make weekday mornings easier.

butter: Flavor enhancer
Egg: combine all ingredients together
Maple sugar: provide some sweetness
vanilla: Enhances flavor and brings a hint of sweetness
peanut butter: Star of the show! I use the creamy, unsalted variety, but use whatever variety you have on hand!
Almond milk: I used almond milk because of its mild, neutral flavor, but you can substitute milk or your favorite non-dairy alternative
oatmeal: I love using rolled oats in baked oatmeal because they hold their texture well when baked. If you want to make a gluten-free version, be sure to buy certified gluten-free oatmeal.
Cinnamon: Adds rich, slightly sweet and warm flavor
baking powder: Helps oatmeal rise in the oven and develop a light and fluffy texture
Chia seeds: Adding a little volume to the oatmeal helps provide a creamy texture.Chia seeds also provide protein, fiber and healthy fats
Salt: Essential flavor enhancer
Chocolate Chips: I used semisweet chocolate chips, but you can substitute dark chocolate chips, chocolate chunks, or any chopped chocolate bar

How to Make Peanut Butter Baked Oatmeal
- Prepare baking sheet. Preheat oven to 350 degrees F and grease a 9-inch square or 11×7 baking pan.
- Mix wet ingredients. Whisk melted cream, eggs, maple syrup, vanilla extract, peanut butter, and almond milk in a large bowl until combined.
- Add dry ingredients. Add rolled oats, cinnamon, baking powder, chia seeds, salt, and 1/4 cup chocolate chips and stir until combined.
- Pour in mixture. Pour mixture into prepared baking pan and top with remaining 1/4 cup chocolate chips.
- Bake and serve. Bake until the center of the oatmeal is set, about 45-55 minutes, then cool on a wire rack for at least 10-15 minutes before serving.
Expert Tips
- Make this a make-ahead breakfast! The mixture can be made ahead of time (like on Sunday!) and kept in the refrigerator overnight. Leave it at room temperature while the oven preheats and stir the mixture before baking. Bake it in the morning and you have breakfast ready to go all week long!

Can you freeze baked oatmeal?
Yes, you can! To freeze Peanut Butter Baked Oatmeal, first let it cool completely, then I recommend cutting it into cubes and placing it in an airtight container. If you want to take an extra step, wrap each portion in plastic wrap before placing it in a container. When ready to eat, you can place it directly into a microwave-safe dish and place it in the microwave for about 1-2 minutes.
What to serve with baked oatmeal?
Peanut Butter Baked Oatmeal is delicious on its own with a drizzle of peanut butter on top. For an extra boost of protein, you can also top it with Greek yogurt. Other ingredients include whipped cream, maple syrup, honey and a dash of cinnamon.
Can I substitute the peanut butter?
certainly! You can replace the peanut butter with almond butter, cashew butter, or any other nut butter of your choice. If you are allergic to peanuts and tree nuts, you can also try sunflower or pumpkin seed butter.
Storage and preparation
Leftovers of Peanut Butter Baked Oatmeal can be stored in an airtight container in the refrigerator for up to 4 days. Heat in the microwave for 1-2 minutes and add a little almond milk or milk.
Baked oatmeal is also great for freezing. To store in the refrigerator, bake according to directions, cool completely, then store in an airtight container in the refrigerator for up to 3 months.

- 2 cups oatmeal
- 2 teaspoons Cinnamon
- 1 teaspoon baking powder
- 1 tablespoon chia seeds
- 1/2 teaspoon Salt
- 1/2 cup Chocolate chips, divided (optional)
- Preheat oven to 350 degrees Fahrenheit. Grease a 9-inch square or 11×7 baking pan.
