How to Cook Grilled Artichokes

Artichokes were one of the first things the pilot and I made for dinner. When we first started dating, money was tight, so instead of going out to eat, we shared a tuna steak and cooked two artichoke hearts at home for our big dinner. Pilot is the king of artichokes and over time he has shared his methods for cooking them to perfection. They look like an intimidating vegetable—they’re covered in battle spears, for God’s sake—but they’re an easy-to-prepare and nutritious side.

Artichokes need to be trimmed slightly before cooking. You’ll need to remove the leaves from the artichoke, trim the tops and stems, and scoop out the stems.

After trimming, place the artichokes in a bowl of cold water and squeeze in lemon juice to prevent browning. You can also rub lemon juice on the cut area of ​​each artichoke, but I find it much easier to soak them in lemon water.

Cook artichokes for 20-30 minutes or until tender. Alternatively, you can steam the artichokes for 20 minutes. Check they are done by piercing one of the stems with a fork to see if it comes through easily.

  • 1 bay leaf

  1. Cut off the top of the choke and about 1/2 inch to 1 inch off the stem. Pull off any outer leaves that look bruised or funky.
  2. Place the artichokes in a bowl of cold water and squeeze in the lemon juice to prevent browning.
  3. Bring a large pot of water to a boil.
  4. Add half a lemon, a bay leaf and 1/2 teaspoon salt.
  5. Place the artichokes in the pot, cover and boil for 20-30 minutes depending on size. Make sure all parts of the artichokes are boiling, which may mean stirring occasionally.
  6. To check if an artichoke is done, remove it from the boiling water and lightly pierce the stem with a fork. If it’s easy to pass, you’re GTG. If there is any resistance, return the artichokes to the pan for 5 minutes and check again.
  7. Once the artichokes are fully cooked, you can stop here to prepare the dipping sauce. If you have the grill heated, you can take the artichokes out, pat them dry, cut them in half, and brush them lightly with olive oil or cream.
  8. Grill over high heat for about 5 minutes (until well charred) and sprinkle with sea salt.
