Do you ever get frustrated when you make eight servings of a recipe? Then you’re stuck with a pile of leftovers that you have to eat for the rest of the week. Sure, you can do the math and downsize the recipe, but sometimes it’s difficult when you’re dealing with package sizes. Who wants to take out the computer on their phone anyway? The good news is that eating plant-based is easy for a person if the recipes are reduced to single servings from the start. In fact, I’ve gotten this request so many times that my goal is to create a plant-based cookbook for one in the near future!
