describe

This light and delicious Easy Vegan Orange Bread is filled with the flavor of fresh oranges and will add a ray of sunshine to your kitchen.

Orange Bread:

Orange glaze:

  • 2 teaspoons orange juice
  • 1/3 cup powdered sugar
  • 1 tablespoon fresh orange peel (approx. 1 medium orange)

  1. Preheat oven to 350 F.
  2. Place aquafaba (the liquid from the can of beans) into a mixing bowl. Add sugar. Mix with an electric mixer on high speed until mixture is very thick and forms stiff peaks, about 5 minutes. (A stand mixer is great for this step).
  3. Reduce the speed of the mixer and gently fold in the margarine, yogurt and orange juice.
  4. Add white whole wheat flour, all-purpose flour, baking powder, baking soda and orange zest. Stir gently until batter is smooth. Do not over mix as it will make the bread tough.
  5. Line a loaf pan (8 1/2 x 4 1/2 x 2 1/2 inches) with parchment paper.
  6. Pour the batter into the lined baking pan and smooth the surface with a spatula.
  7. Place in the center of the oven and bake for 50-55 minutes, until the top is golden brown and a toothpick inserted into the center comes out clean.
  8. Let sit in the pan for 10 minutes, then remove from the pan and allow to cool completely.
  9. Make the glaze by blending the orange juice and powdered sugar with a small mixer until smooth. Drizzle glaze over cooled bread. Sprinkle with 1 tablespoon orange zest.
  10. Cut into 12 slices. Serve immediately. Store airtight in the refrigerator for up to 7 days and in the freezer for up to 6 months.

notes

*Aquafaba is the liquid left in a can of beans. Simply drain a can of chickpeas or white beans and you’ll have about ½ cup of liquid. Use it in step 1 of the recipe. Learn more here.
